It would be hard to pick a favorite vegetable, but if I had to it would be the humble zucchini hands down. It’s so versatile and full of flavor and particularly high in insoluble fibre, so your gut will also love this vegetable for getting things moving! It tastes delicious eaten raw or cooked. Oh and did I mention it’s super healthy. You can prepare this dish in minutes and it’s a fresh and zesty accompaniment to your chosen protein. I find even the fussiest kids love this dish..
What you’ll need…
1 large zucchini, per person
Juice of ½ lemon
1 tsp. pure butter
1 Tbsp. olive or macadamia oil
Pinch of Himalayan or Celtic sea salt and cracked pepper
How to make…
Grate the zucchini and add to a preheated pan with butter oil, lemon juice, salt and pepper and sauté for a minute or two, then serve immediately.
Serving size – ½ – ¾ cup at least
Sally’s Tips…
Serve as base to any dish, such as fish, organic chicken, or 100% grass fed red meat, or serve in addition to other veges like cauliflower rice
