EYH MEMBER RECIPE:  Spicy Kale Chips

Gluten Free, Cow’s Dairy Free, Fructose Free, Diabetic Friendly, Paleo friendly, Low Carb

I fell in love with these when I was looking for a healthy snack, while travelling in the US last year, so when I returned home, I went on a mission to bake them myself!  If you’re a fan of chips or crisps, these make for a nutritious and delicious alternative to high starch potatoe chips – great for travelling on the road or added to the kids lunch boxes… although their friends may  think they are a little weird eating green chips!

What you’ll need… 

  • A bunch of kale  – remove from the stalk
  • 1 tbsp olive oil
  • Pinch salt
  • ¼ tsp ground turmeric
  • ¼ tsp ground cumin
  • ¼ tsp ground ginger

How to make… 

  • Preheat oven to 200C.  Tear or cut the kale roughly into – around 5 cm pieces.  Add the olive oil, spices and salt to a medium bowl and mix together with a spoon, before adding the kale and toss through the oil to combine.
  • Place the kale on a baking tray lined with grease proof paper and  place in the oven for 5 – 10minutes or until crispy.

Sally’s Tip… 

These can be made without the spices if you or the kids prefer them plain.
